These bananas were so ripe and sweet it tasted like sugar was added to the batter. Looking at those banana peels and egg shells gets me excited about starting my kitchen scrap compost. It’s not as convenient to keep a pile going in the winter months in Michigan.
As much as this photo gives the impression of a pancake that will bubble up and be flipped … it bubbled up and flopped. Every time I tried to turn it, it became more obvious that a pancake it was not. What a mess! After cooking what looked like scrambled eggs, I happily ate the evidence.
So, while I started with the intention of making 2-ingredient pancakes, I salvaged my remaining batter by throwing in a cup of flour and making a loaf of banana bread.
The banana bread was good, but I love the idea of the 2 ingredient pancakes. After finding Faith’s, at The Kitchn, I’ll try them again and make them much smaller. It appears to be key to this recipe.
